Born and raised in Denmark, I'm very open minded and love to be creative, both  behind the camera and in front of the stove. Equality - in every definition of the word - is in my DNA and taboos and tradition, to me, is something the world is better off without. And no, I don't look like Jason Statham. I was born first, so it's Jason Statham who looks like me.

THE FOOD DUDE:



I'm a professional baker, cook and pastry chef. I teach occasionally In the local community centres, on top of my other jobs - one as a baker and one as a cook. I started as a baker in March of '79, doing a three years apprenticeship culminating in a journeyman certificate with a 'better than average' score.

I immigrated to Canada in 1993. Started my first food venture in  2001 and have been everywhere in the baking industry, on every step of the ladder. I have baked for dignitaries, ambassadors and the previous Danish Minister of Defense (Hans Engell). On the 23rd of December 2016 my pastries were featured on national TV and in 2026 I'll be cooking for the Vancouver games of the  FIFA World Cup.

I have done (and still do) 'everything' in terms of bakery products, but growing up in Europe where quality breads is a huge deal, my deepest passions are devoted to sourdough breads. Especially when they come with a yummy soup or delicious stew. Beware, though, that 'sourdough' in North-American terms, is a laughable joke to most Europeans. Ask me for clarification on that statement, but make a mental note that I make the real stuff. Only two ingredients in a real sourdough: Purity and goodness. And yes, I'm on the volunteer list of WORLD CENTRAL KITCHEN.

THE PHOTOGRAPHER:


I make no excuses and have nothing to apologize for. I'm not a professional (photographer), have no desire to become one and don't pretend to be one (like so many others do). Food pays my bills, photography enriches my life. 

The moment you become a professional, you are prostituting yourself to please others, to make it to the next paycheck. That's why I do it for free. I do what I like, on my own terms. 

I'm not interested in pretty. I'm interested in gritty. The raw. The natural. Reality in photography. My aim is to "pry open your mind with a crowbar" and force a response/reaction/opinion in you, whether good or bad. In other words, actually make you think a little bit. It's all about creativity. It's about breaking taboos and traditions and not do what everybody else is doing. Not interested in the mundane, the bland and the boring. It's goth over glam. 

I love the human body in it's natural state as it changes with age. From the perfect, smooth body to the deeply flawed one with all its wrinkles, sagging parts and battle scars. All you have to do...to love it, too...is to free your mind. But that being said, I want to point out that I don't do smut (as defined by me), just as I don't do peanut butter and jelly sandwiches. There has to be a certain level of artistic and/or creative value to it.

I'm not looking for freaks, creeps and pervs. I'm looking for normal, open minded, down-to-earth and easy going people who like to do something new in a different way and enjoy the process along the way.

THE "EVERYTHING-ELSE-ON-TOP-OF-THE-PAGE" DUDE:


Ok, the top of the page is a lot of pictures of geographical locations plus a sprinkle of chosen words. Call it "social commentary" if you like, but words are the basis of all communication and communication is the basis of comprehension/understanding, which just happens to be the basis of acceptance and "peace" as in getting along, even if not agreeing. 

I am, generally speaking, not a big talker (more on the quiet side), but if you hit me on a subject i'm passionate about, the flood gates will open. My style of communication is calm and fact based. Respectful but assertive. I'm floating around in the mostly empty space between being a deep thinker and an "action Jackson", and my port of entry is humour. I love intelligent conversation and I appreciate knowledgeable people I can learn from.

I read a lot. Or at least I try to read as much as possible, as much as I have time for, because reading improves your brain's capacity to process "things" such as thoughts & ideas and it improves your vocabulary and your ability to express yourself in a clear and concise manner.

Other than reading, I like creative writing and I am currently working on a auto-biography and trust me, it ain't gonna be a boring one. Some will hate my auto-biography, if it ever becomes commercially available, because it's not beating around the bush and doesn't hide anything that that particular group of haters would consider taboo or not politically correct enough. But the vast majority, I can assure you, would find it mind-blowingly good, entertaining, blunt and honest. Very powerful. I'm also an avid short-story writer and I posted a few examples, well knowing that they won't be to everybody's liking, as they are blunt and often from the dark side of humanity. Some are purely fictional. Others are reality based.

  2. Interesting blog from a great baker. I received your card some time ago when I bought some fabulous cinnamon buns (without raisins: I asked, you may remember), on Moffatt Road. Any idea when you might do another Moffatt Road sale? I'd love to chat further.
